Description

Shrimp & Rice is a flavorful and easy one-pan meal featuring tender shrimp sautéed with garlic, onions, and spices, served over perfectly seasoned rice. A quick and comforting dish ideal for weeknight dinners.


Ingredients

  • 1 lb (450g) medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili flakes (optional)
  • Juice of 1/2 lemon
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add chopped onion and cook for 3–4 minutes until softened.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in rice and cook for 1–2 minutes, letting it lightly toast.
  4. Pour in broth, add paprika, salt, pepper, and chili flakes (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  5. After 15 minutes, add shrimp to the skillet on top of the rice. Cover and cook for another 5–7 minutes, or until the shrimp are pink and rice is tender.
  6. Remove from heat, squeeze lemon juice over the dish, and fluff the rice gently with a fork.
  7. Garnish with chopped parsley and serve warm.

Notes

  • Use frozen shrimp (thawed) for convenience.
  • Add diced bell peppers or peas for extra color and nutrition.
  • Swap broth for water and bouillon if needed.
  • For a creamier version, stir in a splash of coconut milk or cream at the end.
