Description
Shrimp & Rice is a flavorful and easy one-pan meal featuring tender shrimp sautéed with garlic, onions, and spices, served over perfectly seasoned rice. A quick and comforting dish ideal for weeknight dinners.

- 1 lb (450g) medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili flakes (optional)
- Juice of 1/2 lemon
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium heat. Add chopped onion and cook for 3–4 minutes until softened.
- Add garlic and sauté for 1 minute until fragrant.
- Stir in rice and cook for 1–2 minutes, letting it lightly toast.
- Pour in broth, add paprika, salt, pepper, and chili flakes (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add shrimp to the skillet on top of the rice. Cover and cook for another 5–7 minutes, or until the shrimp are pink and rice is tender.
- Remove from heat, squeeze lemon juice over the dish, and fluff the rice gently with a fork.
- Garnish with chopped parsley and serve warm.
Notes
- Use frozen shrimp (thawed) for convenience.
- Add diced bell peppers or peas for extra color and nutrition.
- Swap broth for water and bouillon if needed.
- For a creamier version, stir in a splash of coconut milk or cream at the end.
