- 1 pound raw shrimp, peeled and deveined
- 2 large heads romaine lettuce, chopped
- 1/2 cup parmesan cheese, shaved or grated
- 1 cup croutons
- 3/4 cup Caesar dressing
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/3 cup olive oil
- 1 teaspoon Worcestershire sauce
- 1 teaspoon anchovy paste (optional)
- Black pepper, to taste
Instructions
- Preheat a grill pan or skillet over medium-high heat and lightly oil it.
- Whisk together olive oil, lemon juice, garlic, Dijon mustard, anchovy paste, Worcestershire sauce, and black pepper until creamy. Stir in parmesan cheese.
- Place shrimp in a bowl, drizzle with olive oil, and season with salt and pepper. Grill or sear for 2–3 minutes per side until pink and slightly charred.
- In a large bowl, toss chopped romaine with Caesar dressing. Add shrimp, croutons, and parmesan.
- If making homemade croutons, toast bread cubes until golden and crunchy.
- Toss everything gently to coat evenly. Top with extra cheese and black pepper.
- Serve immediately while shrimp is warm and lettuce is crisp.

- Chill lettuce and plates for extra crispness.
