Description

Schezwan Paneer Fried Rice is a spicy and flavorful Indo-Chinese dish featuring crispy paneer cubes stir-fried with vegetables, aromatic rice, and a bold Schezwan sauce that adds a perfect kick.


Ingredients

  • 1 cup basmati rice, cooked and cooled
  • 200g paneer, cubed
  • 2 tbsp oil
  • 1 small onion, finely chopped
  • 1/2 cup bell peppers, diced (mix of red, green, yellow)
  • 1/2 cup carrots, julienned
  • 23 green chilies, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Schezwan sauce
  • 1 tbsp soy sauce
  • 1/2 tsp black pepper
  • Salt to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat 1 tbsp oil in a pan, shallow fry paneer cubes until golden and crisp. Set aside.
  2. In the same pan, add remaining oil and sauté onions, garlic, and green chilies until fragrant.
  3. Add diced bell peppers and carrots, stir-fry for 3-4 minutes until slightly tender.
  4. Mix in Schezwan sauce, soy sauce, black pepper, and salt. Cook for 2 minutes.
  5. Add cooked rice and fried paneer to the pan. Toss everything together gently to coat the rice evenly with the sauce.
  6. Cook for another 3-4 minutes on medium heat, stirring occasionally.
  7. Garnish with chopped green onions and serve hot.

Notes

  • Use day-old rice for best texture and less clumping.
  • Adjust Schezwan sauce quantity to control spice level.
  • For a vegan version, substitute paneer with tofu and use vegan sauces.
