Rotel Spiced Sausage & Cream Cheese Bites are savory, creamy, and slightly spicy appetizers made with seasoned sausage, tangy Rotel tomatoes, and rich cream cheese, all baked in a golden crescent roll shell. They’re perfect for parties, game days, or holiday gatherings.

- 1 lb ground pork sausage (spicy or mild)
- 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
- 8 oz cream cheese, softened
- 2 cans (8 oz each) refrigerated crescent roll dough
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 egg, beaten (optional, for egg wash)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess grease.
- Add drained Rotel tomatoes and garlic powder to the sausage. Cook for 1–2 minutes until well combined.
- Remove from heat and stir in cream cheese until mixture is creamy and fully incorporated. Season with salt and pepper to taste.
- Unroll crescent dough and separate into triangles. Cut each triangle in half to make smaller bites (optional).
- Spoon a heaping tablespoon of the sausage mixture onto the center of each triangle and fold the dough over to seal. Pinch edges closed.
- Brush tops with beaten egg if desired for a golden finish.
- Bake for 12–15 minutes or until golden brown and puffed.
- Let cool slightly before serving. Best enjoyed warm.

- You can prepare the sausage mixture ahead of time and refrigerate until ready to assemble.
- Try using flaky biscuit dough instead of crescent rolls for a thicker bite.
- Serve with ranch dressing or spicy dipping sauce for extra flavor.
