Description

Ingredients

  • 3 cups cherry tomatoes
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 6 garlic cloves, thinly sliced
  • 3 tablespoons olive oil
  • 1 sprig fresh rosemary, chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Rustic bread, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place a rack in the center of the oven.
  2. In a mixing bowl, toss cherry tomatoes with olive oil, sliced garlic, salt, pepper, rosemary, and thyme.
  3. Transfer the mixture to a baking dish and spread the tomatoes into a single layer.
  4. Roast for 25 minutes until the tomatoes start to blister and release juices.
  5. Add the drained white beans and stir gently to coat them with the roasting juices.
  6. Return to the oven and roast for an additional 15 minutes until everything is golden and bubbling.
  7. Remove from the oven, drizzle with more olive oil, and garnish with fresh herbs.
