- 1.5 pounds beef tenderloin, cut into 1-inch cubes
- 6 to 8 garlic cloves, smashed
- 2 sprigs fresh rosemary, chopped
- 2 sprigs fresh thyme, chopped
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Place your cast iron skillet over medium-high heat and let it get hot.
- In a bowl, toss the beef cubes with olive oil, rosemary, thyme, salt, and pepper until evenly coated.
- Add a bit of oil to the hot skillet, then toss in the smashed garlic cloves. Sauté until golden and fragrant.
- Add the beef cubes to the skillet in a single layer, avoiding overcrowding.
- Sear the beef for 2 to 3 minutes on each side until browned on the outside and medium rare inside.
- Toss with garlic once more and sprinkle with flaky sea salt before serving.
- Transfer to a platter and serve hot with dipping sauce if desired.
Notes
- Let beef come to room temperature before cooking for even searing.
- Use a hot pan and avoid crowding to get a nice crust.
- Fresh herbs deliver the best flavor, but dried can be used in a pinch.
- Serve with creamy horseradish or herb aioli for extra flavor.
