Description

Tender, juicy beef tenderloin bites infused with roasted garlic and fresh herbs, seared to perfection for a mouthwatering appetizer or main course.


Ingredients

  • 1.5 pounds beef tenderloin, cut into 1-inch cubes
  • 6 to 8 garlic cloves, smashed
  • 2 sprigs fresh rosemary, chopped
  • 2 sprigs fresh thyme, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Place your cast iron skillet over medium-high heat and let it get hot.
  2. In a bowl, toss the beef cubes with olive oil, rosemary, thyme, salt, and pepper until evenly coated.
  3. Add a bit of oil to the hot skillet, then toss in the smashed garlic cloves. Sauté until golden and fragrant.
  4. Add the beef cubes to the skillet in a single layer, avoiding overcrowding.
  5. Sear the beef for 2 to 3 minutes on each side until browned on the outside and medium rare inside.
  6. Toss with garlic once more and sprinkle with flaky sea salt before serving.
  7. Transfer to a platter and serve hot with dipping sauce if desired.

Notes

  • Let beef come to room temperature before cooking for even searing.
  • Use a hot pan and avoid crowding to get a nice crust.
  • Fresh herbs deliver the best flavor, but dried can be used in a pinch.
  • Serve with creamy horseradish or herb aioli for extra flavor.
