Description

This crisp and cool cucumber agua fresca is lightly sweetened and brightened with lime and mint. A perfect refreshment for hot days or any time you need a little hydration boost.


Ingredients

  • 2 large fresh cucumbers, peeled and chopped
  • 1/4 cup fresh mint leaves (packed)
  • Juice of 2 limes
  • 1/4 cup granulated sugar (adjust to taste)
  • 4 cups cold water
  • Ice cubes, for serving

Instructions

  1. In a blender, combine chopped cucumbers, mint leaves, lime juice, sugar, and 2 cups of cold water. Blend until smooth.
  2. Place a fine mesh strainer over a pitcher and pour the mixture through. Use a spoon to press and extract as much liquid as possible.
  3. Stir in the remaining 2 cups of cold water.
  4. Taste and adjust sweetness or lime as needed.
  5. Chill in the refrigerator until ready to serve.
  6. Serve over ice and garnish with cucumber slices or mint sprigs.

  • Use seedless cucumbers for a smoother drink.
  • Blend the mint with the cucumber for a stronger herbal flavor.
