Description

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet or pizza pan with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream butter, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla.
  4. Gradually mix in the dry ingredients until a dough forms.
  5. Press the dough into a 10-inch circle on the prepared baking sheet.
  6. Bake for 12 to 15 minutes until edges are golden and center is just set. Cool completely.
  7. Spread pistachio cream over cooled cookie crust.
  8. Top with fresh raspberries and chopped pistachios.
