- 3 cups all-purpose flour
- 1 cup pumpkin puree
- 2¼ teaspoons active dry yeast
- ¼ cup granulated sugar
- ½ cup whole milk, warmed
- 2 tablespoons unsalted butter, melted
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 12 whole cloves (optional, for stems)
- Vegetable oil, for brushing
Instructions
- Prepare your steamer with parchment paper squares and warm the milk until just warm to the touch.
- In a large bowl, mix warm milk, sugar, and yeast. Let sit for 5 minutes until foamy. Add pumpkin puree, melted butter, salt, cinnamon, and nutmeg.
- Gradually stir in flour until a dough forms. Knead until smooth. Cover and let rise in an oiled bowl for 1 hour.
- Divide dough into 12 pieces. Roll into balls. Use string or a knife to create pumpkin ridges.
- Place buns on parchment squares in steamer. Let rest 15 minutes. Steam for 12–15 minutes until fluffy and cooked through.
- Remove string (if used) and insert cloves or pumpkin seeds as stems. Serve warm.
Notes
- Use pumpkin puree, not pumpkin pie filling.
- To freeze, steam first and cool before freezing.
- Brush buns with a little oil before steaming for shine.
- For a sweeter bun, add a teaspoon of vanilla extract.
