- 1 cup canned pumpkin puree
- 1/2 cup sweetened condensed milk
- 2 large eggs
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- Mini pie crusts (enough for 24 bites)
Instructions
- Preheat your oven to 350°F and grease a mini muffin tin or line with paper liners.
- In a mixing bowl, whisk together pumpkin puree, condensed milk, eggs, sugar, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
- Place mini pie crusts into each muffin cup, pressing them gently to fit.
- Fill each crust about 3/4 full with the pumpkin mixture.
- Bake for 18 to 22 minutes, or until the centers are just set.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
- Serve chilled or at room temperature. Optional: top with whipped cream or a dusting of cinnamon.
Notes
- Let bites cool completely before storing to prevent soggy crusts.
- Use silicone liners for easier removal and cleanup.
