- 1 scoop (about 30g) Vanilla Protein Powder
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- 1/4 teaspoon Salt
- 2 large Eggs
- 3/4 cup Milk of Choice
- 1 medium Mashed Banana
- 1 teaspoon Vanilla Extract
- 1/2 cup Optional Add-ins (blueberries or dark chocolate chips)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- In a large bowl, whisk together oat flour, protein powder, baking powder, cinnamon, and salt.
- In another bowl, mix eggs, milk, mashed banana, and vanilla extract until smooth.
- Combine wet and dry ingredients, folding gently until just mixed.
- Pour the batter into the prepared dish and spread evenly. Add desired toppings.
- Bake for 22–25 minutes until golden and the center is set.
- Cool for 5–10 minutes, then slice and serve warm with your favorite toppings.
Notes
- Let the batter rest for 5 minutes before baking for fluffier texture.
- Store in fridge for up to 5 days or freeze slices for later.
- Use parchment paper for easy cleanup and slice removal.
