- 1 pound lean ground turkey or chicken
- 1 cup cooked black beans
- 1 cup chopped spinach
- 1 small red bell pepper, diced
- 1 cup shredded cheddar cheese
- 4 large whole wheat tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional: Greek yogurt or sour cream
- 1 fresh lime, cut into wedges
Instructions
- Heat a non-stick skillet over medium heat.
- Add olive oil, then cook ground turkey or chicken with garlic powder, cumin, salt, and pepper until browned.
- Add diced bell pepper and spinach. Sauté for 2–3 minutes until soft.
- Warm each tortilla in a clean pan for about 20 seconds per side.
- On each tortilla, layer the cooked mixture, black beans, and shredded cheese. Add lime juice or yogurt if desired.
- Wrap the burrito tightly. Optional: Toast seam side down in the skillet for a crispy finish.
- Slice in half and serve warm.
Notes
- Do not overfill tortillas to prevent tearing.
- Let filling cool slightly before wrapping to avoid sogginess.
- Freeze wrapped burritos for easy meal prep.
