Description

These crispy Potato Pancakes are golden brown on the outside and soft on the inside, made with simple ingredients like grated potatoes, onions, and eggs. Perfect as a side dish, appetizer, or snack!


Ingredients

  • 4 medium russet potatoes, peeled and grated
  • 1 small onion, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • Sour cream or applesauce, for serving (optional)

Instructions

  1. Place grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible.
  2. In a large bowl, combine the potatoes, onion, eggs, flour, salt, and pepper. Mix well.
  3. Heat 1/4 inch of vegetable oil in a large skillet over medium-high heat.
  4. Scoop about 1/4 cup of the potato mixture into the skillet and flatten slightly with a spatula. Repeat with remaining mixture, being careful not to overcrowd the pan.
  5. Fry each pancake for 3-4 minutes per side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  6. Serve hot with sour cream or applesauce if desired.

Notes

  • To keep pancakes warm, place them on a baking sheet in a 200°F (93°C) oven until ready to serve.
  • Adding a little baking powder (1/2 tsp) can make pancakes fluffier.
  • These pancakes freeze well—reheat in the oven for best texture.
