Possum Pie is a beloved Southern dessert featuring layers of sweet cream cheese, rich chocolate pudding, and fluffy whipped cream over a buttery pecan crust. It’s a crowd-pleasing treat perfect for any occasion.

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, melted
- 1 cup chopped pecans
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 container (8 oz) whipped topping, divided
- 2 packages (3.4 oz each) instant chocolate pudding mix
- 3 cups cold milk
- 1/4 cup mini chocolate chips or shaved chocolate (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, melted butter, and chopped pecans until combined. Press mixture into the bottom of a 9×13-inch baking dish.
- Bake crust for 15-18 minutes or until lightly golden. Let cool completely.
- In another bowl, beat cream cheese and powdered sugar until smooth. Fold in 1 cup whipped topping and spread over cooled crust.
- In a separate bowl, whisk together pudding mixes and cold milk until thickened. Spread pudding over cream cheese layer.
- Top with remaining whipped topping and smooth out evenly.
- Refrigerate for at least 2 hours before serving. Garnish with mini chocolate chips or shaved chocolate if desired.
Notes
- Make sure the crust is completely cool before adding the cream cheese layer.
- You can use vanilla or butterscotch pudding for a flavor twist.
- This pie can be made a day ahead and chilled overnight for best results.
