- 4 crusty sandwich rolls or ciabatta buns
- 500g cooked porchetta, thinly sliced or shredded
- Fresh arugula or baby spinach (optional)
- For the Garlic Herb Mayo:
- 1/2 cup mayonnaise
- 1 garlic clove, finely minced
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh rosemary or thyme, chopped
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- In a small bowl, mix mayonnaise with minced garlic, chopped herbs, lemon juice, salt, and pepper. Set aside.
- Warm the sliced or shredded porchetta in a skillet over medium heat, if desired.
- Slice the sandwich rolls in half and toast lightly.
- Spread a generous layer of garlic herb mayo on the bottom halves of the rolls.
- Top with warmed porchetta and a handful of arugula or greens if using.
- Spread more mayo on the top half of each roll, close the sandwiches, and serve immediately.
Notes
- Use leftover porchetta or deli-style if you’re short on time.
- Great with pickled onions or roasted peppers for added zing.
