Description

- 1 cup whole milk, at room temperature
- 2 large eggs, at room temperature
- 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 450°F (230°C). Grease a popover pan or muffin tin with melted butter.
- In a medium bowl, whisk together the eggs and milk until well combined.
- Whisk in the melted butter and salt.
- Gradually add the flour, whisking until the batter is smooth and free of lumps.
- Fill each cup of the pan about halfway with batter.
- Bake for 15 minutes at 450°F (230°C) without opening the oven door.
- Reduce the oven temperature to 350°F (175°C) and bake for an additional 15–20 minutes until the popovers are puffed and golden brown.
- Immediately remove popovers from the pan and serve warm.
Notes
- For crisper popovers, poke a small hole in each one with a knife after baking to release steam.
- Experiment with adding herbs, cheese, or cinnamon sugar to the batter for different flavors.
- Room temperature ingredients are crucial for proper rise.
