Description

Poor Man’s Husband Casserole is a budget-friendly, hearty comfort food made with layers of seasoned ground beef, tomato sauce, noodles, and a creamy cheese filling. It’s simple to prepare and perfect for feeding a hungry family.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 oz egg noodles
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter (optional, for greasing the dish)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat.
  3. Add tomato sauce, Italian seasoning, salt, and pepper to the beef mixture. Simmer for 5-10 minutes.
  4. Meanwhile, cook the egg noodles according to package directions. Drain and set aside.
  5. In a medium bowl, mix sour cream and cream cheese until smooth.
  6. Layer half of the cooked noodles in the bottom of the prepared baking dish. Spread the sour cream and cream cheese mixture over the noodles.
  7. Top with the remaining noodles, then pour the beef and tomato mixture evenly over the top.
  8. Sprinkle shredded cheddar cheese over the casserole.
  9. Bake for 20-25 minutes, or until the cheese is melted and the casserole is heated through.
  10. Let rest for 5 minutes before serving.

Notes

  • You can substitute the egg noodles with any pasta you have on hand.
  • For extra flavor, add a pinch of red pepper flakes or some chopped bell peppers to the meat sauce.
  • This casserole freezes well—just cover tightly before freezing and reheat when ready.
