Description
Pollo Guisado is a traditional Latin American stewed chicken dish made with tender chicken pieces simmered in a rich tomato-based sauce infused with herbs, spices, and vegetables. It’s comforting, flavorful, and perfect served over rice.

- 2 lbs bone-in, skinless chicken thighs or drumsticks
- 2 tbsp olive oil
- 1 bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/4 cup tomato sauce
- 1/4 cup chopped cilantro
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 1 tsp salt (adjust to taste)
- 1/2 tsp paprika
- 2 cups chicken broth or water
- 1 large potato, peeled and cubed (optional)
- 1 tbsp apple cider vinegar or lime juice
Instructions
- Season the chicken with salt, pepper, cumin, oregano, and paprika. Let it marinate for at least 30 minutes if possible.
- In a large pot, heat olive oil over medium heat. Add the chicken and brown on all sides for 5–7 minutes. Remove and set aside.
- In the same pot, sauté onions, bell peppers, and garlic until softened, about 3–4 minutes.
- Stir in the tomato sauce, cilantro, and vinegar or lime juice. Cook for 2 minutes.
- Return the chicken to the pot and add chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25–30 minutes.
- Add potatoes if using, and continue to cook for another 15–20 minutes until potatoes and chicken are tender.
- Adjust seasoning if needed and serve hot with rice or plantains.
Notes
- Marinating the chicken longer enhances the flavor.
- You can substitute tomato sauce with fresh blended tomatoes.
- Use boneless chicken for a quicker version, adjusting the cooking time.
