Description

Pollo Guisado is a traditional Latin American stewed chicken dish made with tender chicken pieces simmered in a rich tomato-based sauce infused with herbs, spices, and vegetables. It’s comforting, flavorful, and perfect served over rice.


Ingredients

  • 2 lbs bone-in, skinless chicken thighs or drumsticks
  • 2 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 1/4 cup chopped cilantro
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp paprika
  • 2 cups chicken broth or water
  • 1 large potato, peeled and cubed (optional)
  • 1 tbsp apple cider vinegar or lime juice

Instructions

  1. Season the chicken with salt, pepper, cumin, oregano, and paprika. Let it marinate for at least 30 minutes if possible.
  2. In a large pot, heat olive oil over medium heat. Add the chicken and brown on all sides for 5–7 minutes. Remove and set aside.
  3. In the same pot, sauté onions, bell peppers, and garlic until softened, about 3–4 minutes.
  4. Stir in the tomato sauce, cilantro, and vinegar or lime juice. Cook for 2 minutes.
  5. Return the chicken to the pot and add chicken broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 25–30 minutes.
  7. Add potatoes if using, and continue to cook for another 15–20 minutes until potatoes and chicken are tender.
  8. Adjust seasoning if needed and serve hot with rice or plantains.

Notes

  • Marinating the chicken longer enhances the flavor.
  • You can substitute tomato sauce with fresh blended tomatoes.
  • Use boneless chicken for a quicker version, adjusting the cooking time.
