A bold fusion of flavors, these Pistachio Matcha Miso Bars feature a creamy, umami-rich filling layered over a nutty toasted sesame crust—perfectly balanced between earthy, salty, and sweet.


Ingredients

  • For the Crust:
  • 1 cup toasted sesame seeds
  • 1/2 cup almond flour
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • Pinch of salt
  • For the Filling:
  • 1 cup shelled pistachios
  • 1 tablespoon matcha powder
  • 1 tablespoon white miso paste
  • 1/4 cup maple syrup
  • 1/4 cup coconut cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. Mix all crust ingredients in a bowl until combined. Press evenly into the prepared dish and bake for 10–12 minutes until golden. Let cool.
  3. In a food processor, blend pistachios until finely ground.
  4. Add matcha, miso, maple syrup, coconut cream, vanilla, and lemon juice. Blend until smooth and creamy.
  5. Spread the filling over the cooled crust and smooth the top.
  6. Chill in the fridge for at least 2 hours or until set.
  7. Cut into bars and serve chilled. Store leftovers refrigerated.

Notes

  • Use tahini instead of sesame seeds for a smoother crust base.
  • Adjust miso to taste for more or less umami.
  • Top with extra crushed pistachios or matcha dust before serving.
