A bold fusion of flavors, these Pistachio Matcha Miso Bars feature a creamy, umami-rich filling layered over a nutty toasted sesame crust—perfectly balanced between earthy, salty, and sweet.

- For the Crust:
- 1 cup toasted sesame seeds
- 1/2 cup almond flour
- 1/4 cup maple syrup or honey
- 1/4 cup coconut oil, melted
- Pinch of salt
- For the Filling:
- 1 cup shelled pistachios
- 1 tablespoon matcha powder
- 1 tablespoon white miso paste
- 1/4 cup maple syrup
- 1/4 cup coconut cream
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- Mix all crust ingredients in a bowl until combined. Press evenly into the prepared dish and bake for 10–12 minutes until golden. Let cool.
- In a food processor, blend pistachios until finely ground.
- Add matcha, miso, maple syrup, coconut cream, vanilla, and lemon juice. Blend until smooth and creamy.
- Spread the filling over the cooled crust and smooth the top.
- Chill in the fridge for at least 2 hours or until set.
- Cut into bars and serve chilled. Store leftovers refrigerated.
Notes
- Use tahini instead of sesame seeds for a smoother crust base.
- Adjust miso to taste for more or less umami.
- Top with extra crushed pistachios or matcha dust before serving.
