Description

Silky smooth pistachio custard tucked into buttery tartlet shells and topped with whipped cream and chopped pistachios. A refined yet comforting dessert perfect for gatherings or an elegant treat.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 4 large egg yolks
  • 1 1/2 cups whole milk
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup pistachio paste
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • Pinch of salt
  • Chopped pistachios, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare tartlet pans by greasing or lining with parchment.
  2. To make the crust, combine flour, powdered sugar, and salt. Cut in butter until crumbly. Add one egg yolk and a splash of cold water to form dough. Chill for 15 minutes.
  3. Roll out dough and press into tartlet pans. Prick with a fork. Blind bake for 12 minutes with pie weights, then remove weights and bake for 5 more minutes until golden.
  4. For the custard, whisk together egg yolks, sugar, and cornstarch. Heat milk, cream, and pistachio paste in a saucepan. Slowly temper the egg mixture with the warm milk, whisking constantly.
  5. Return mixture to the saucepan and cook over medium heat until thickened. Stir in vanilla extract and strain for a silky texture.
  6. Pour custard into cooled tart shells and bake at 325°F (160°C) for 10 minutes to lightly set (optional).
  7. Chill tartlets for at least 2 hours until fully set.
  8. Top with whipped cream and chopped pistachios before serving.
