- 2 lbs chicken wings, separated into drumettes and flats
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Oil for frying
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- 2 tbsp chopped green onions (for garnish)
- 1 tbsp sesame seeds (optional)
Instructions
- Marinate chicken wings in buttermilk for at least 1 hour (or overnight) in the refrigerator.
- In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Dredge the wings in the flour mixture until well-coated.
- Heat oil in a deep skillet or fryer to 350°F (175°C). Fry wings in batches for 8-10 minutes or until golden and fully cooked. Drain on paper towels.
- In a saucepan, combine pineapple juice, soy sauce, brown sugar, honey, garlic, and ginger. Bring to a simmer and cook for 5 minutes. Stir in cornstarch slurry and cook until thickened.
- Toss the fried wings in the pineapple glaze until coated evenly.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- Double fry the wings for extra crispiness.
- Adjust the sweetness of the glaze by adding more honey or sugar if desired.
- These wings are best served immediately while hot and crispy.
