- 1.5 pounds raw chicken pieces, boneless and skinless, cut into chunks
- 1 can (20 oz) pineapple chunks with juice
- 1/4 cup soy sauce
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger root, grated
- 2 tablespoons brown sugar
- 2 teaspoons cornstarch
- 1 tablespoon sesame oil
- 2 green onions, sliced
- 2 cups cooked white rice
- 1 tablespoon sesame seeds
Instructions
- Set a skillet or wok over medium-high heat to preheat.
- In a small bowl, whisk together pineapple juice (from the can), soy sauce, brown sugar, garlic, ginger, and cornstarch until smooth.
- Add oil to the hot skillet, then sear chicken chunks until golden on the outside.
- Pour in the sauce mixture and add the pineapple chunks. Stir to coat everything evenly.
- Let the sauce simmer for 8–10 minutes until thick and glossy, stirring occasionally.
- Turn off the heat and stir in sesame oil, green onions, and sesame seeds.
- Serve over warm cooked rice and enjoy.

- Use fresh pineapple if preferred, just add extra juice or water.
- To add heat, mix in chili flakes or sriracha to the sauce.
