Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the pie crust on a lightly floured surface into a thin rectangle, about 1/8-inch thick.
- Brush the entire surface with melted butter.
- In a small bowl, mix sugar, cinnamon, and a pinch of salt. Sprinkle evenly over the buttered dough.
- Roll the dough up tightly into a log (like a jelly roll) and slice into 1/2-inch pieces.
- Place cookies cut-side down on the prepared baking sheet, spacing them slightly apart.
- Bake for 12–15 minutes or until golden and crisp.
- Cool slightly before serving. Enjoy warm or at room temperature.
