- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 4 tablespoons butter
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped chives
- Black pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Scrub the potatoes clean and dry them thoroughly.
- Prick each potato several times with a fork.
- Rub the potatoes with olive oil and sprinkle with kosher salt.
- Place directly on the oven rack or a baking sheet. Bake for 45 to 60 minutes, until a fork inserts easily and skin is crisp.
- Remove from oven and let rest for 5 minutes.
- Slice open, fluff the interior with a fork, and top with butter, sour cream, cheddar cheese, chives, and black pepper.
- Serve hot and enjoy!
