Description
Tender chicken gizzards simmered until soft, then sautéed with onions, chili peppers, garlic, ginger, and a bold pepper sauce that delivers rich savory flavor with a gentle spicy kick.
Ingredients
Scale
- 500 grams chicken gizzards, cleaned
- 1 medium onion, sliced
- 2 fresh red chili peppers, sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons vegetable oil
- 1 teaspoon freshly ground black pepper
- 1 teaspoon salt
- 2 tablespoons green onions, sliced
Instructions
- Place the cleaned chicken gizzards in a pot with water and simmer over medium heat for about 20 minutes until tender. Drain and set aside.
- In a bowl, combine soy sauce, oyster sauce, ground black pepper, and salt. Stir well to create the pepper sauce mixture.
- Heat vegetable oil in a large skillet over medium heat.
- Add sliced onions, minced garlic, and grated ginger. Cook while stirring for about 3 minutes until fragrant and slightly softened.
- Add the cooked gizzards to the skillet and stir to combine with the aromatics.
- Pour in the sauce mixture and add the sliced red chili peppers.
- Cook for 5 to 7 minutes while stirring occasionally so the sauce coats the gizzards evenly and thickens slightly.
- Sprinkle sliced green onions over the dish and cook for 1 additional minute.
- Serve warm and enjoy.
Notes
- Simmering the gizzards first helps ensure they become tender before sautéing.
- Freshly ground black pepper gives the dish its signature aroma and flavor.
- You can adjust the chili peppers depending on how spicy you want the dish.
- The dish pairs well with steamed rice, fried plantains, or warm flatbread.
