Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk flour, baking powder, cinnamon, nutmeg, and salt in a bowl.
- Cream vegan butter with brown sugar and granulated sugar until fluffy, then mix in applesauce and vanilla.
- Fold dry ingredients into the wet mixture until just combined.
- Stir in diced apple and chopped pecans.
- Scoop dough onto the prepared sheet, spacing 2 inches apart.
- Bake 11 to 13 minutes until edges are lightly golden and centers look set.
- Cool on the sheet 5 minutes, then transfer to a rack to finish cooling.
Notes
- Chill dough 15 minutes if sticky for easier scooping.
- Use firm apples such as Granny Smith or Honeycrisp for the best texture.
- Store with a slice of bread in the container to keep cookies soft.
