Description

Peanut Butter Buckeye Cookies combine rich peanut butter cookies with a creamy peanut butter center and a smooth chocolate topping — a perfect blend of sweet and salty!


Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar
  • 1/2 cup peanut butter (for filling)
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Beat together the butter, 1/2 cup peanut butter, brown sugar, and granulated sugar until creamy.
  3. Add in the egg and vanilla extract and blend well.
  4. Mix in flour, baking soda, and salt until a soft dough forms.
  5. Roll into 1-inch balls and place on prepared sheet 2 inches apart. Bake for 10-12 minutes and let cool.
  6. Meanwhile, mix powdered sugar and 1/2 cup peanut butter until smooth. Roll into small balls and press into the center of cooled cookies.
  7. Melt chocolate chips and spoon or pipe over the tops of the cookies. Chill briefly to set.
