- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 1/2 cup peanut butter (for filling)
- 1 cup chocolate chips
Instructions
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Beat together the butter, 1/2 cup peanut butter, brown sugar, and granulated sugar until creamy.
- Add in the egg and vanilla extract and blend well.
- Mix in flour, baking soda, and salt until a soft dough forms.
- Roll into 1-inch balls and place on prepared sheet 2 inches apart. Bake for 10-12 minutes and let cool.
- Meanwhile, mix powdered sugar and 1/2 cup peanut butter until smooth. Roll into small balls and press into the center of cooled cookies.
- Melt chocolate chips and spoon or pipe over the tops of the cookies. Chill briefly to set.
Notes
- For a festive twist, add sprinkles on the chocolate tops.
- Store in an airtight container for up to 5 days.
