- 12 ounces dry pasta
- 4 large yellow onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped parsley
Instructions
- Place a large skillet over medium-low heat to preheat.
- Add olive oil and butter to the skillet. Once melted, stir in the sliced onions and a pinch of salt.
- Cook onions slowly for 35–40 minutes, stirring occasionally, until deeply golden and caramelized.
- While onions cook, bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
- Add garlic and thyme to the caramelized onions. Cook for 1 minute until fragrant.
- Toss cooked pasta into the skillet with the onion mixture. Add reserved pasta water a bit at a time to loosen the sauce.
- Stir in parmesan cheese and black pepper. Mix until cheese is melted and pasta is coated.
- Serve topped with chopped parsley and extra cheese, if desired.
Notes
- Use a mix of butter and oil to prevent burning and add flavor.
- Stir onions occasionally, allowing them to sit for a few minutes between stirs for better browning.
- Reserve pasta water to create a silky sauce.
- Caramelized onions can be made in advance and refrigerated or frozen.
