- 12 oz rotini pasta
- 1 1/2 cups cherry tomatoes
- 3/4 cup sliced black olives
- 1 medium cucumber
- 1/3 cup red onion
- 1 cup mozzarella cheese cubes
- 1/4 cup fresh parsley
- 3/4 cup Italian dressing
Instructions
- Bring a large pot of salted water to a boil and cook the rotini pasta until al dente.
- Drain the pasta well and transfer it to a large mixing bowl.
- Add the cherry tomatoes, sliced black olives, diced cucumber, sliced red onion, mozzarella cubes, and chopped parsley.
- Pour the Italian dressing over the salad.
- Toss gently until all ingredients are evenly coated.
- Cover and refrigerate for at least 30 minutes to allow flavors to blend.
- Toss again before serving and enjoy.
