Description

A fresh and colorful pasta salad tossed with zesty Italian dressing, crisp vegetables, and creamy mozzarella, perfect for gatherings, meal prep, or an easy lunch.


Ingredients

  • 12 oz rotini pasta
  • 1 1/2 cups cherry tomatoes
  • 3/4 cup sliced black olives
  • 1 medium cucumber
  • 1/3 cup red onion
  • 1 cup mozzarella cheese cubes
  • 1/4 cup fresh parsley
  • 3/4 cup Italian dressing

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini pasta until al dente.
  2. Drain the pasta well and transfer it to a large mixing bowl.
  3. Add the cherry tomatoes, sliced black olives, diced cucumber, sliced red onion, mozzarella cubes, and chopped parsley.
  4. Pour the Italian dressing over the salad.
  5. Toss gently until all ingredients are evenly coated.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  7. Toss again before serving and enjoy.
