  • 2 celery stalks, diced
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta (like ditalini or orzo)
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/4 cup chopped fresh parsley (optional)
  • Parmesan rind (optional, for deeper flavor)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Pour in the broth and add the Parmesan rind if using. Bring to a boil.
  4. Add pasta and reduce heat to a simmer. Cook according to package directions, stirring occasionally.
  5. Remove the Parmesan rind and discard.
  6. Stir in grated Parmesan cheese, salt, and pepper. Simmer for 2-3 more minutes until cheese is melted and soup is creamy.
  7. Garnish with fresh parsley and serve hot.
