Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
- Pour in the broth and add the Parmesan rind if using. Bring to a boil.
- Add pasta and reduce heat to a simmer. Cook according to package directions, stirring occasionally.
- Remove the Parmesan rind and discard.
- Stir in grated Parmesan cheese, salt, and pepper. Simmer for 2-3 more minutes until cheese is melted and soup is creamy.
- Garnish with fresh parsley and serve hot.
