- 250 grams paneer, cut into thick slices
- 1 ripe mango, diced
- 1/2 medium red onion, finely chopped
- 1/2 medium red bell pepper, diced
- 2 tablespoons fresh cilantro, chopped
- 1 small green chili, finely chopped
- Juice from 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper, freshly ground
- 1 tablespoon olive oil
- 1/4 teaspoon cumin powder
Instructions
- Heat a cast iron skillet or nonstick pan over medium-high heat until hot.
- In a bowl, combine diced mango, red onion, bell pepper, green chili, cilantro, lime juice, salt, and pepper. Chill until serving.
- Add olive oil to the skillet, swirling to coat the base.
- Season paneer slices with salt, black pepper, and cumin powder.
- Sear paneer slices for 2–3 minutes on each side until golden brown.
- Place hot paneer on serving plates and top with the chilled mango salsa.
- Serve immediately with lime wedges and fresh herbs if desired.
Notes
- Use firm, ripe mango for best texture in salsa.
- Let the salsa sit for 10–15 minutes before serving to blend flavors.
- Pat paneer dry before cooking for a better sear.
- Can be made ahead by prepping salsa and marinating paneer in advance.
