Oven-Fried Squash is a crispy, golden side dish that gives you all the crunch of traditional fried squash—without the oil! Lightly breaded and oven-baked to perfection, it’s a healthier Southern-style favorite that’s perfect for summer dinners or snacking.

- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1 cup buttermilk (or milk with 1 tsp vinegar)
- 1 cup cornmeal
- 1/2 cup breadcrumbs (plain or seasoned)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- Cooking spray or olive oil spray
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spray with cooking spray.
- Place squash slices in a bowl and cover with buttermilk. Let soak for 10–15 minutes.
- In another bowl, mix cornmeal, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Remove squash slices from buttermilk and dredge in the cornmeal mixture, pressing gently to coat.
- Arrange coated squash on the prepared baking sheet. Spray the tops with cooking spray.
- Bake for 20–25 minutes, flipping halfway, until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
Notes
- Try using zucchini instead of yellow squash for variety.
- Use seasoned breadcrumbs for an extra flavor boost.
- Great paired with ranch or spicy mayo dipping sauce.
