- 1 pound shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 (9-ounce) package refrigerated cheese tortellini
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same pot, add garlic and sauté until fragrant, about 1 minute.
- Add chicken broth, heavy cream, and tortellini. Bring to a simmer, cover, and cook for 7-9 minutes, stirring occasionally, until tortellini is tender.
- Stir in Parmesan cheese, cooked shrimp, salt, and pepper. Cook for another 2 minutes until heated through and sauce thickens slightly.
- Garnish with fresh parsley before serving.
