- 12 ounces penne pasta
- 1 pound boneless, skinless chicken, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 3 cups marinara sauce
- 3 cups water or chicken broth
- 1½ cups shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Place your pot over medium-high heat. Add olive oil and let it warm up.
- Add chicken to the pot. Season with salt and pepper. Sear until golden. Remove and set aside.
- In the same pot, sauté onions until translucent. Stir in garlic, basil, and oregano.
- Pour in marinara sauce and water (or broth). Stir to combine and scrape up browned bits.
- Add uncooked pasta to the sauce. Return chicken to the pot. Stir well to coat evenly.
- Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is al dente and chicken is cooked through.
- Stir in mozzarella and half the parmesan until melted. Sprinkle remaining parmesan and parsley on top.
- Let rest for a few minutes before serving.
Notes
- Use fresh-grated cheese for better melting and flavor.
- Stir pasta often to prevent sticking.
- Letting the dish rest helps flavors meld together.
