Description

A cozy and comforting one-pot dish combining tender chicken, penne pasta, rich marinara sauce, and gooey cheese for an easy, family-friendly dinner.


Ingredients

  • 12 ounces penne pasta
  • 1 pound boneless, skinless chicken, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 3 cups marinara sauce
  • 3 cups water or chicken broth
  • 1½ cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place your pot over medium-high heat. Add olive oil and let it warm up.
  2. Add chicken to the pot. Season with salt and pepper. Sear until golden. Remove and set aside.
  3. In the same pot, sauté onions until translucent. Stir in garlic, basil, and oregano.
  4. Pour in marinara sauce and water (or broth). Stir to combine and scrape up browned bits.
  5. Add uncooked pasta to the sauce. Return chicken to the pot. Stir well to coat evenly.
  6. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is al dente and chicken is cooked through.
  7. Stir in mozzarella and half the parmesan until melted. Sprinkle remaining parmesan and parsley on top.
  8. Let rest for a few minutes before serving.

Notes

  • Use fresh-grated cheese for better melting and flavor.
  • Stir pasta often to prevent sticking.
  • Letting the dish rest helps flavors meld together.
