This One-Pan Gnocchi with Cherry Tomatoes, Spinach & Mozzarella is a quick and comforting dish that’s bursting with flavor. Soft gnocchi is pan-seared and simmered with juicy tomatoes and wilted spinach, then topped with melty mozzarella for a satisfying, weeknight-friendly meal.

- 1 tbsp olive oil
- 1 lb (500g) potato gnocchi (shelf-stable or fresh)
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 cup water or vegetable broth
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the gnocchi and sauté for 5–7 minutes until golden and slightly crispy on the outside.
- Add garlic and cook for 1 minute until fragrant.
- Stir in the cherry tomatoes, salt, pepper, and Italian seasoning. Cook for 3–4 minutes until tomatoes soften.
- Add spinach and a splash of water or broth. Stir and cover for 2–3 minutes until spinach wilts.
- Sprinkle mozzarella evenly over the gnocchi and cover again for 1–2 minutes, or until the cheese melts.
- Remove from heat and garnish with fresh basil if desired. Serve warm.
Notes
- Use sun-dried tomatoes for extra flavor if fresh cherry tomatoes are not available.
- For a spicy kick, add a pinch of red pepper flakes with the garlic.
- This dish pairs well with a green salad or crusty bread.
