- 6 boneless, skinless chicken thighs (about 1.5 lbs)
- 3 large yellow onions, thinly sliced
- 2 cups sliced mushrooms (baby bella or cremini)
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon fresh thyme, chopped
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 375°F if using an oven-safe skillet for finishing.
- Season chicken thighs with salt and pepper. In a bowl, mix shredded mozzarella and thyme, then set aside.
- Heat olive oil and butter in a large skillet over medium heat. Add onions and cook for 25 minutes until deeply caramelized. Add mushrooms and cook for 5 more minutes, then stir in garlic.
- Push onions and mushrooms to the side of the pan. Sear chicken on both sides until golden brown, about 3–4 minutes per side. Pour in beef broth and nestle chicken into the mixture.
- Simmer for 10–15 minutes, or transfer to the oven and bake for 15 minutes until the chicken is fully cooked.
- Sprinkle mozzarella mixture over each piece of chicken. Broil for 2–3 minutes until cheese is golden and bubbly.
- Spoon extra sauce and onions over the top, garnish with fresh thyme, and serve hot.
Notes
- Use Gruyère instead of mozzarella for a more traditional French onion flavor.
- Caramelize onions low and slow to avoid burning and achieve deep sweetness.
- This dish can be made ahead and tastes even better the next day.
