Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking dish.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add eggs, melted butter, lemon juice, lemon zest, and vanilla extract directly into the bowl. Mix until smooth and fully combined.
  4. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  5. Bake for 25–30 minutes or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
  6. Let cool completely before slicing. Dust with powdered sugar before serving if desired.
