- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Lightly grease or line an 8×8-inch baking dish.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add eggs, melted butter, lemon juice, lemon zest, and vanilla extract directly into the bowl. Mix until smooth and fully combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 25–30 minutes or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
- Let cool completely before slicing. Dust with powdered sugar before serving if desired.
Notes
- Use Meyer lemons for a sweeter citrus flavor.
- Add white chocolate chips or berries for variation.
