- 2 cups old-fashioned rolled oats
- 1 large mashed banana (about 1/2 cup)
- 2 large eggs
- 1 and 1/2 cups milk (dairy or plant-based)
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup mixed berries (fresh or frozen)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease or line an 8×8-inch baking dish.
- In a large bowl, mash the banana. Add eggs, milk, maple syrup, vanilla, cinnamon, salt, and baking powder. Whisk until smooth.
- Stir in the oats and gently fold in the mixed berries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35 to 40 minutes or until golden and set in the center.
- Let it rest for 5 to 10 minutes before slicing. Serve warm and enjoy.
