A soft and cozy baked breakfast made with ripe bananas, oats, cinnamon, and pantry staples, all mixed in one bowl and baked until lightly golden.

- 3 medium ripe bananas, mashed
- 2 large eggs
- 1/2 cup milk
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 2 cups old-fashioned oats
- 1 teaspoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons melted butter
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or line it with parchment paper.
- In a large bowl, mash the bananas until mostly smooth.
- Add the eggs, milk, maple syrup, vanilla extract, and melted butter, then whisk until well combined.
- Stir in the oats, baking powder, ground cinnamon, and salt until everything is evenly mixed.
- Pour the mixture into the prepared baking dish and spread it into an even layer.
- Bake for 30 to 35 minutes, until the top is lightly golden and the center is set.
- Let cool for 10 minutes before slicing into 6 squares and serving.
Notes
- Use very ripe bananas for the sweetest flavor and softest texture.
- Do not overmix once the oats are added, or the bake may turn heavy.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Warm individual slices in the microwave for 20 to 30 seconds before serving.
