Description

A soft and cozy baked breakfast made with ripe bananas, oats, cinnamon, and pantry staples, all mixed in one bowl and baked until lightly golden.


Ingredients

  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Add the eggs, milk, maple syrup, vanilla extract, and melted butter, then whisk until well combined.
  4. Stir in the oats, baking powder, ground cinnamon, and salt until everything is evenly mixed.
  5. Pour the mixture into the prepared baking dish and spread it into an even layer.
  6. Bake for 30 to 35 minutes, until the top is lightly golden and the center is set.
  7. Let cool for 10 minutes before slicing into 6 squares and serving.

Notes

  • Use very ripe bananas for the sweetest flavor and softest texture.
  • Do not overmix once the oats are added, or the bake may turn heavy.
