- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1/2 cup crystallized ginger, chopped (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
- In a bowl, combine oats, flour, baking soda, salt, ground ginger, and cinnamon.
- In a separate large bowl, cream butter and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Alternately add dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
- Fold in crystallized ginger if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
- Use regular milk with 1 tablespoon vinegar as a buttermilk substitute.
- For a stronger ginger flavor, increase ground ginger to 1 1/2 teaspoons.
- Serve with whipped cream or cream cheese frosting for extra indulgence.
