- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil
- 2 1/2 cups rolled oats
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup mini chocolate chips or dark chocolate chunks (optional)
Instructions
- In a saucepan over low heat, combine peanut butter, honey (or maple syrup), and coconut oil. Stir until melted and smooth.
- Remove from heat and stir in vanilla extract and salt.
- Add the oats and mix until well combined. Let the mixture cool slightly, then fold in chocolate chips if using (reserve some for topping).
- Scoop the mixture into a lined muffin tin, pressing it down firmly into each cup.
- Sprinkle with reserved chocolate chips on top.
- Refrigerate for at least 1 hour, or until firm.
- Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
