Description

These no-bake peanut butter oat cups are a quick, healthy, and satisfying snack made with simple pantry ingredients. Perfect for meal prep, snacking, or a guilt-free dessert.


Ingredients

  • 1 cup natural peanut butter (creamy or crunchy)
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 2 1/2 cups rolled oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips or dark chocolate chunks (optional)

Instructions

  1. In a saucepan over low heat, combine peanut butter, honey (or maple syrup), and coconut oil. Stir until melted and smooth.
  2. Remove from heat and stir in vanilla extract and salt.
  3. Add the oats and mix until well combined. Let the mixture cool slightly, then fold in chocolate chips if using (reserve some for topping).
  4. Scoop the mixture into a lined muffin tin, pressing it down firmly into each cup.
  5. Sprinkle with reserved chocolate chips on top.
  6. Refrigerate for at least 1 hour, or until firm.
  7. Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
