Ingredients
- Chicken Thighs: 6 bone-in, skin-on thighs
- Olive Oil: 2 tablespoons
- Garlic: 4 cloves, minced
- Shallots: 2 small, finely chopped
- Dijon Mustard: 2 tablespoons
- Heavy Cream: 1 cup
- Chicken Broth: ½ cup
- Fresh Thyme: 1 teaspoon
- Salt: 1 teaspoon, or to taste
- Black Pepper: ½ teaspoon
Instructions
- Preheat Your Equipment: Heat a large skillet over medium-high heat. Add olive oil and let it get hot and shimmering.
- Combine Ingredients: Season chicken thighs with salt and pepper. Mince garlic and chop shallots while the oil heats.
- Prepare Your Cooking Vessel: Once the oil is hot, place the chicken thighs skin-side down. Cook for about 5-7 minutes until the skin is golden and crisp. Flip and cook the other side for 3 minutes, then remove and set aside.
- Assemble the Dish: In the same skillet, add garlic and shallots. Sauté for 2 minutes until softened. Stir in mustard, cream, and broth. Let it bubble for a minute.
- Cook to Perfection: Nestle the chicken back into the sauce. Sprinkle with thyme. Reduce heat to low, cover partially, and simmer for 20-25 minutes until chicken is cooked through.
- Finishing Touches: Remove lid, increase heat slightly to reduce sauce if needed. Taste and adjust seasoning.
- Serve and Enjoy: Spoon chicken onto plates and drizzle with extra sauce. Garnish with herbs and serve hot.
Notes
- Use bone-in, skin-on chicken for best flavor.
- Don’t boil the cream—simmer gently.
- Adjust salt and mustard levels to taste.
- Add a touch of lemon juice to brighten the sauce.
