Description

These Nigella Chicken Thighs are tender, juicy, and simmered in a creamy Dijon mustard sauce that’s rich, comforting, and full of flavor. Perfect for weeknight dinners or casual entertaining.

Ingredients

  • Chicken Thighs: 6 bone-in, skin-on thighs
  • Olive Oil: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Shallots: 2 small, finely chopped
  • Dijon Mustard: 2 tablespoons
  • Heavy Cream: 1 cup
  • Chicken Broth: ½ cup
  • Fresh Thyme: 1 teaspoon
  • Salt: 1 teaspoon, or to taste
  • Black Pepper: ½ teaspoon

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat. Add olive oil and let it get hot and shimmering.
  2. Combine Ingredients: Season chicken thighs with salt and pepper. Mince garlic and chop shallots while the oil heats.
  3. Prepare Your Cooking Vessel: Once the oil is hot, place the chicken thighs skin-side down. Cook for about 5-7 minutes until the skin is golden and crisp. Flip and cook the other side for 3 minutes, then remove and set aside.
  4. Assemble the Dish: In the same skillet, add garlic and shallots. Sauté for 2 minutes until softened. Stir in mustard, cream, and broth. Let it bubble for a minute.
  5. Cook to Perfection: Nestle the chicken back into the sauce. Sprinkle with thyme. Reduce heat to low, cover partially, and simmer for 20-25 minutes until chicken is cooked through.
  6. Finishing Touches: Remove lid, increase heat slightly to reduce sauce if needed. Taste and adjust seasoning.
  7. Serve and Enjoy: Spoon chicken onto plates and drizzle with extra sauce. Garnish with herbs and serve hot.

Notes

  • Use bone-in, skin-on chicken for best flavor.
  • Don’t boil the cream—simmer gently.
  • Adjust salt and mustard levels to taste.
  • Add a touch of lemon juice to brighten the sauce.
