Instructions

- In another bowl, beat eggs, oil, and milk until well combined.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently fold in shredded zucchini, cheddar, mozzarella, and Parmesan cheeses.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
