Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

  3. In another bowl, beat eggs, oil, and milk until well combined.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Gently fold in shredded zucchini, cheddar, mozzarella, and Parmesan cheeses.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
