Description

  • 1 lb package of bacon, cooked and crumbled
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup mayonnaise
  • 1 teaspoon garlic salt or 3 teaspoons minced garlic
  • 1/2 cup thinly sliced green onions
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the diced potatoes, most of the shredded cheddar cheese (reserve some for the top), cooked and crumbled bacon, and green onions.
  3. Add the mayonnaise and garlic salt (or minced garlic) to the potato mixture. Stir everything together until the potatoes are evenly coated.
  4. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  5. Bake for 1 hour 30 minutes, or until the potatoes are tender and the top is golden brown. The baking time may vary depending on how small you dice your potatoes.
  6. If you reserved cheese, sprinkle it on top during the last 15 minutes of baking for a fresh, melted layer.
  7. Let the casserole cool for a few minutes before serving.
