- 1 cup crushed golden Oreos (or vanilla sandwich cookies)
- 2 tbsp melted butter
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1/4 cup sour cream
- 1/4 cup strawberry preserves or puree
- 1/2 cup freeze-dried strawberries, crushed
- 1/2 cup crushed golden Oreos (for topping)
- Optional: whipped cream for garnish
Instructions
- Preheat oven to 325°F (163°C). Line a mini muffin pan with paper liners.
- Mix 1 cup crushed golden Oreos with melted butter and press about 1 teaspoon into each liner to form the crust.
- In a mixing bowl, beat cream cheese until smooth. Add sugar, vanilla, egg, and sour cream, beating until creamy.
- Add strawberry preserves or puree and mix until combined.
- Spoon cheesecake filling over the crusts, filling each cup nearly to the top.
- Bake for 12–15 minutes or until centers are just set. Cool completely, then chill in the fridge for at least 2 hours.
- In a small bowl, mix crushed freeze-dried strawberries with additional crushed Oreos.
- Top each chilled cheesecake bite with the strawberry crunch topping.
- Optional: add a dollop of whipped cream before serving.
Notes
- Use a piping bag for neat filling distribution.
- Store in the refrigerator for up to 5 days.
- Can be made ahead and frozen—add the topping after thawing.
