Ingredients

  • 500 grams ground beef
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup black beans
  • 1 cup corn kernels
  • 2 cups tomato sauce
  • 1 medium onion, diced
  • 1 medium bell pepper, chopped
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 180°C.
  2. Heat olive oil in a skillet, cook onion, bell pepper, and garlic until fragrant. Add ground beef and cook until browned.
  3. Stir in taco seasoning, tomato sauce, black beans, and corn kernels. Simmer for a few minutes until slightly thickened.
  4. Lightly grease a baking dish.
  5. Layer tortillas, meat mixture, and shredded cheese. Repeat layers and finish with cheese on top.
  6. Bake for 25 minutes until cheese is melted and golden.
  7. Let it rest for 10 minutes before slicing and serving.
