- 500 grams ground beef
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup black beans
- 1 cup corn kernels
- 2 cups tomato sauce
- 1 medium onion, diced
- 1 medium bell pepper, chopped
- 3 garlic cloves
- 2 tablespoons olive oil
- 2 tablespoons taco seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 180°C.
- Heat olive oil in a skillet, cook onion, bell pepper, and garlic until fragrant. Add ground beef and cook until browned.
- Stir in taco seasoning, tomato sauce, black beans, and corn kernels. Simmer for a few minutes until slightly thickened.
- Lightly grease a baking dish.
- Layer tortillas, meat mixture, and shredded cheese. Repeat layers and finish with cheese on top.
- Bake for 25 minutes until cheese is melted and golden.
- Let it rest for 10 minutes before slicing and serving.
