- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
- In a large bowl, toss zucchini, cherry tomatoes, chicken, onion, garlic, olive oil, oregano, salt, and pepper until evenly coated.
- Pour the mixture into the baking dish and spread it out evenly.
- Top with shredded mozzarella cheese, covering the entire surface.
- Bake uncovered for 25 to 30 minutes, until the cheese is melted and golden and veggies are tender.
- Optional: Broil for 2–3 minutes at the end for a golden, bubbly top.
- Let rest for 5 minutes before slicing and serving.
