Description

- 2 pounds medium whole beets, trimmed
- 3 cloves garlic, minced finely
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Rinse the beets thoroughly and trim the stems. Do not peel them.
- Place the beets on a baking sheet and wrap them loosely in foil to create a sealed packet.
- Roast for 45 to 60 minutes, or until a knife slides in easily.
- Remove from the oven and allow them to cool slightly. Rub off the skins and cut into bite sized cubes.
- In a mixing bowl, toss the warm beet cubes with olive oil, minced garlic, salt, and black pepper. Let sit for 10 minutes, then fold in the chopped parsley.
- Transfer to a serving bowl and serve warm or at room temperature.
Notes
- Toss the beets while they are still slightly warm so they absorb the olive oil and garlic flavor better.
- Adjust salt to taste before serving.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
