Description

Tender roasted beets tossed with fresh garlic, extra virgin olive oil, parsley, salt, and pepper. A simple Mediterranean side dish that is vibrant, earthy, and full of clean flavor.


Ingredients

  • 2 pounds medium whole beets, trimmed
  • 3 cloves garlic, minced finely
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Rinse the beets thoroughly and trim the stems. Do not peel them.
  3. Place the beets on a baking sheet and wrap them loosely in foil to create a sealed packet.
  4. Roast for 45 to 60 minutes, or until a knife slides in easily.
  5. Remove from the oven and allow them to cool slightly. Rub off the skins and cut into bite sized cubes.
  6. In a mixing bowl, toss the warm beet cubes with olive oil, minced garlic, salt, and black pepper. Let sit for 10 minutes, then fold in the chopped parsley.
  7. Transfer to a serving bowl and serve warm or at room temperature.

Notes

  • Toss the beets while they are still slightly warm so they absorb the olive oil and garlic flavor better.
  • Adjust salt to taste before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
