Description

Mediterranean Beef Kabobs are tender chunks of marinated beef skewered with colorful vegetables and grilled to perfection. Bursting with herbs, garlic, and olive oil, these kabobs offer a delicious taste of the Mediterranean and are perfect for a healthy and satisfying meal.


Ingredients

  • 1 1/2 lbs beef sirloin, cut into 1.5-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced into thick rounds
  • For the marinade:
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 3 garlic cloves, minced
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar (or lemon juice), garlic, oregano, paprika, cumin, salt, and pepper to make the marinade.
  2. Add the beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Thread the marinated beef, bell peppers, onion, and zucchini onto the skewers, alternating pieces.
  6. Grill the kabobs for about 10–12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender and slightly charred.
  7. Remove from the grill and let rest for a few minutes before serving.

Notes

  • Serve with tzatziki sauce, hummus, or a side of couscous or pita bread.
  • For even cooking, cut all the vegetables and meat into uniform sizes.
  • You can also cook these kabobs in the oven at 425°F (220°C) for 15–20 minutes, turning halfway through.
