This comforting Meat & Potato Casserole combines seasoned ground beef, tender potatoes, creamy sauce, and melty cheese into one satisfying bake. It’s the perfect hearty dish for family dinners or cozy weekends.

- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups russet potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme (optional)
- 2 cups shredded cheddar cheese (divided)
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Add diced onion and garlic; sauté until fragrant.
- Add ground beef and cook until browned. Drain excess fat and season with salt, pepper, and thyme.
- In a bowl, mix cream of mushroom soup, sour cream, and milk until smooth.
- Layer half of the sliced potatoes in the baking dish. Spread half of the beef mixture on top, followed by half of the sauce and 1 cup cheese.
- Repeat layers with remaining potatoes, beef, sauce, and top with remaining cheese.
- Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20 minutes, or until potatoes are tender and top is golden and bubbly.
- Let rest 5–10 minutes before serving. Garnish with chopped parsley.
Notes
- Use a mandoline slicer for evenly thin potato slices.
- You can substitute cream of mushroom with cream of chicken soup.
- Add green beans or corn for a complete one-dish meal.
