Description

This comforting Meat & Potato Casserole combines seasoned ground beef, tender potatoes, creamy sauce, and melty cheese into one satisfying bake. It’s the perfect hearty dish for family dinners or cozy weekends.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups russet potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (optional)
  • 2 cups shredded cheddar cheese (divided)
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Add diced onion and garlic; sauté until fragrant.
  3. Add ground beef and cook until browned. Drain excess fat and season with salt, pepper, and thyme.
  4. In a bowl, mix cream of mushroom soup, sour cream, and milk until smooth.
  5. Layer half of the sliced potatoes in the baking dish. Spread half of the beef mixture on top, followed by half of the sauce and 1 cup cheese.
  6. Repeat layers with remaining potatoes, beef, sauce, and top with remaining cheese.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20 minutes, or until potatoes are tender and top is golden and bubbly.
  8. Let rest 5–10 minutes before serving. Garnish with chopped parsley.

Notes

  • Use a mandoline slicer for evenly thin potato slices.
  • You can substitute cream of mushroom with cream of chicken soup.
  • Add green beans or corn for a complete one-dish meal.
